Rainbow trout are normally harvested at portion size, which is around half a kilo. But this celebrity farm on the River Itchen makes a point of growing its fish to three kilos, which enables us to get several bone-free portions from each fish. The colour of the flesh is a vibrant orange that is spectacular to look at.

 

The quality from this farm is outstanding and it's not just us saying that - Jamie Oliver and Yottam Ottolenghi think so too. The farm is a sustainable producer of trout and are defined as a 'net producer' - which means they use under a tonne of fish food to raise a tonne of trout.

 

We also offer fillet steaks, belly sashimi, and back sashimi.
