Wild Hand Dived King Scallops

We buy all of our hand dived scallops from Jersey. They can be seasonal as the divers struggle to get out frequently during the winter and this in turn slows supply and shoots the price up in the off season. However we try to buy a year's worth during the abundant summer months so you can enjoy dived scallops all year round. Being hand caught means the seabed looks a lot neater and healthier than if they had been caught by dredging. They have also been hand shucked at source by the divers who, being keener on diving than shucking, generally leave the "vein" attached to their scallops. It's just a tiny thread - you can see glimpses of it in the picture. However, it will only take you a moment to remove this.

Sustainability - our rating 9/10

Diver caught scallops are a great sustainable choice as this method of fishing does not damage the seabed and the diver is selective on the size.
