The humble reputation that surrounds Coley is due to its flesh being brownish (although it cooks to white). However, it's plentiful and available in good sizes, at good prices. It tastes very similar to cod. It's got a sweet tasting finish with a light texture and the flesh is flaky but firm, making it easy to handle. They work excellently when pan fried and served with new potatoes and buttered vegetables.
