This sweet tasting fish is often looked over, however it is a superb replacement for cod. It's plentiful, making it a more sustainable option and it's available in good sizes. The flesh is a brownish colour but turns white when cooked, and the big, firm flakes make it easy to handle. This particular cut is from the top of the neck and are therefore quite thick. This means they're good for oven baking since they'll hold moisture a bit better than the thinner cuts.
